Green Pea Soup

  • 1 kg Peas.
  • 1½ quarts Second Stock.
  • 1 handful of spinach.
  • 1 sprig parsley, 1 sprig Mint.
  • 1 teaspoonful sugar.
  • Pepper and Salt.

Put the stock on to boil ; shell the peas and wash the pods very carefully ; add the peas to the stock, the spinach carefully washed, the parsley, mint, and sugar, and a small basin of the very nicest of the pea-pods ; boil 14 hours ; strain, rubbing all through the sieve ; add pepper and salt, and serve.
